Lemon Grilled Zucchini

 

You too can live out your summer dreams with this platter of Grilled Lemon Zucchini with plant based feta and pine nuts!! I used a grill pan for this, so even if you don’t have a grill (or it’s too freakin cold to cook inside), you can make this in the comfort of your own home.

Ingredients (serves 2)

  • 2 medium zucchini, cut into slices at a diagonal

  • Olive oil to brush on zucchini

  • 1 1/2 tbsp pine nuts

  • 2 tbsp feta (I used Violife plant-based feta, but you can also use regular feta as well)

  • 1 tbsp olive oil

  • Juice of 1 small lemon

  • 1 garlic clove, crushed or finely minced

  • Salt, black pepper, red pepper

  • Fresh parsley

1. Preheat your grill pan on high heat. Brush one side of the zucchini with olive oil and add to your pan. Cook for 3-4 minutes on each side, and then transfer to a platter. Top with feta and pine nuts.

2 Mix together olive oil, lemon juice, and garlic, and drizzle over zucchini. Top with salt, black pepper, and red pepper and some fresh parsley or basil. Eat and enjoy!
