Avocados Stuffed with Chicken Apple Salad!!! Mixed in a little bit of jalapeño for an extra kick. 2020 was a stressful year, but throughout it, I found solace in cooking and creating. This year, I’m going to hone in even more on recipes that are comforting for both my body and mind. This recipe is a great start! It was fun to make and tasted delicious — the process of coming up with foods like these is the ultimate stress reliever.
Ingredients (makes 6 avocado boats)
Yogurt Dressing
½ cup Greek yogurt
1 tbsp lemon juice
¼ tsp cayenne pepper
½ tsp onion powder
¼ tsp garlic powder
Salt & pepper, to taste
1 tbsp hemp seeds
1 tbsp chopped parsley
Avocado Boats
6 avocados
2 chicken breasts
½ apple, core removed and diced
1 small jalapeño, finely chopped
4 tbsp finely chopped red onion
1/3 cup Kourellas Organic Barrel Aged Feta
1. Prepare the yogurt dressing by mixing ingredients together in a small bowl.
2. In a medium bowl, mix together diced chicken, apple, jalapeño, red onion, and feta. Drizzle on the yogurt dressing and toss until everything is combined.
3. Slice the avocados in half and take out the pit. Add a few scoops of the chicken salad to each avocado. Top with hemp seeds and parsley.
