Turmeric Cinnamon Sweet Potato Fries with Cinnamon Yogurt
Turmeric Cinnamon Sweet Potato Fries with pistachios, pomegranate seeds, and cinnamon yogurt drizzle! Lots of mood boosting foods in this one! Great as a snack, holiday app, or even a sweet treat!
Ingredients
2 medium organic garnet sweet potatoes
2 tbsp coconut oil, melted
1 tsp cinnamon
½ tsp turmeric
½ cup yogurt (plain or Greek works)
1/2 tsp vanilla
1 tbsp maple syrup
1/2 tsp cinnamon
4 tbsp pomegranate seeds
4 tbsp crushed pistachios
1. Preheat oven to 425 F. Slice sweet potatoes into fry sizes, and add to a baking sheet. Make sure the potatoes are spread evenly and aren’t on top of each other (use 2 baking sheets if you have to). Toss the potatoes in the melted oil, turmeric, and cinnamon. Bake for about 15-20 minutes. Flip, then bake for another 15-20 minutes, until the outside is crispy.
2. While sweet potatoes are baking, prepare yogurt sauce by mixing together yogurt, vanilla, cinnamon, and maple syrup. When sweet potatoes are ready, drizzle on the yogurt sauce and top with pistachios and pomegranate seeds.
