Herby Lemon Za'atar Salmon over Yogurt & Cherry Tomatoes

This recipe combines all my faves: salmon, tomatoes, yogurt, herbs, and za’atar. If you’re not familiar with za’atar, it’s a Middle Eastern seasoning typically made with oregano/thyme, sumac, sesame seeds and other spices. It’s so good!! I use Z & Z, which you can buy on Amazon, and I highly recommend it! I use it on fish, veggies, eggs, etc.

This salmon is baked, which means it gets nice and tender. It’s actually a super quick meal and one that is loaded with protein, nutrients, and flavor.

Ingredients (serves 2)

  • 1 lb salmon (2 filets)

  • 2 small/medium lemons

  • 1 tsp za’atar seasoning (I love the Z&Z za’atar!)

  • 1 cup Greek yogurt

  • 1 cup cherry tomatoes, halved

  • 2 tbsp roughly chopped parsley

  • 1 tbsp fresh dill

1. Preheat oven to 400 F. Line a baking sheet with aluminum foil, and grease with oil or cooking spray. Add salmon, and squeeze the juice of 1/2 lemon over the salmon filets. Sprinkle with za’atar. Set aside the other lemon half, and thinly slice the remaining lemon (remove the seeds if you can). Place alongside the salmon, and bake for 15 minutes until salmon is flaky.

2. Add the Greek yogurt to a small bowl, and add the juice of the leftover lemon half. Mix, and season with a little bit of salt. Spread on a plate.

3. When salmon is ready, transfer to the plate with the Greek yogurt, and spread the cherry tomatoes around the salmon. Top with the lemon slices, fresh herbs, and a drizzle of olive oil if desired. You can serve warm or chilled!
