Miso Chocolate Chunk Cookies
If you like your dessert a little salty and a little sweet, these babies are for you! Golden on the outside, soft on the outside, and nice and thickkkk! Miso is a traditional Japanese ingredient made with fermented soybeans, and although it’s used often in savory foods like sauces or soups, it adds a nice salty-sweet flavor to cookies!
Ingredients (makes a dozen)
1 1/2 cups almond flour
1/2 cup coconut sugar
1 tsp baking powder
1/2 cup almond butter
1 egg
1/4 cup melted coconut oil
2 1/2 tbsp white miso
1 tsp vanilla
1/2 cup chocolate chunks
Flake salt, to sprinkle on top
1. Preheat oven to 350 F. Line a baking sheet with parchment paper. In a large bowl, mix together almond flour, coconut sugar, and baking powder.
2. In a separate large bowl, mix together almond butter, egg, miso, and vanilla.
3. Fold the dry ingredients into the wet ingredients, and mix with a large spoon until evenly combined. Mix in dark chocolate chunks.
4. Scoop balls of dough into the baking sheet (cookies should be a little less than 1/4 cup sized). Lightly press down on the top (and add more chocolate chunks if desired). Bake for 15 minutes or until cookies just begin to turn gold. Top with flake salt, if desired. Let cool slightly before eating.
