Peach Crumble Bars
This summer dessert is easy, made with wholesome ingredients, and perfect for peach fans!
Ingredients
Dough/Crumble
1 1/2 cup oats
1 1/2 cup almond flour
1/3 cup coconut sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp sea salt
1 egg
3/4 cup coconut oil
1 teaspoon vanilla
1 tablespoon lemon juice
Filling
3 cups chopped peaches - use about 4-5 peaches
1 tbsp lemon juice
1 tbsp maple syrup
1. Preheat oven to 350 F. Line an 8 x 8 baking pan with parchment paper.
2. In a large bowl, mix together oats, almond flour, coconut sugar, baking powder, baking soda, and sea salt. Then add in egg, coconut oil, vanilla and lemon juice. Mix until evenly combined.
3. Press 2/3 of the dough into the baking pan. Spread the peach filling evenly over the pressed dough. Use the remaining dough and crumble it over the peach filling.
4. Bake for about 40 minutes until golden top is golden. Let cool before cutting into bars.
