Pumpkin Cheesecake Overnight Oats
It’s no secret that I love overnight oats, so of course, I had to make the most scrumptious fall version! If you love pumpkin, this breakfast is for you. You can easily make this recipe vegan by using a plant-based cream cheese like Kite Hill.
Ingredients (serves 2-3)
1 1/2 cups rolled/old-fashioned oats
1 cup milk of choice
1/2 cup pumpkin purée
1/4 cup cream cheese
1/2 tsp vanilla
1 1/2 tbsp pure maple syrup
1/2 tsp pumpkin pie spice
1. Mix ingredients in a medium bowl or mason jar. Cover, refrigerate overnight! Enjoy in the morning.
