Healthy Strawberry Crumble
I love fruity desserts. It’s so easy to make healthy desserts with fruit because they provide so much of the sweetness. I particularly love this dessert because it’s made with oats and almond flour, giving it some extra nutrients. Also, a confession: I totally have eaten this for breakfast before…like multiple times. So go for it any time of day ;)
Ingredients (makes about 4 servings)
Filling:
2 cups halved strawberries
2 tsp maple syrup
2 tsp lemon juice
2 tsp vanilla
2 tbsp tapioca starch
Note: If you don’t have tapioca starch, you can try arrowroot powder or corn starch.
Crumble:
1/2 cup rolled oats
1/2 cup finely chopped walnuts
1/2 cup almond flour
Pinch of salt
1/4 cup melted/liquid coconut oil
2 tbsp maple syrup
1 tsp vanilla
1. Preheat oven to 350 F.
2. In a medium bowl, mix together strawberries, maple syrup, lemon juice, and vanilla. Then add in the tapioca starch and toss. Add the mixture to an 8” baking pan.
3. In a separate medium bowl, mix together oats, walnuts, almond flour, and salt. Then stir in the coconut oil, maple syrup, and vanilla until everything is combined. Spread this mixture on top of the strawberries, making sure to cover the berries evenly.
4. Bake for 40-45 minutes until top is golden. Let cool slightly before serving. If you have leftovers, store in the fridge.
