Salted Caramel Chocolate Chip Banana Bread

This is my first banana bread recipe ever, and I’m soo happy with how it came out. This grain-free and dairy free banana bread is super moist, and most importantly, it’s sweet and salty, so you know it’s going to be a good one. The banana on top is totally optional, so leave it out if you don’t have enough bananas. For the chocolate chips, I used Enjoy Life chocolate chips, which are dairy-free.

Ingredients (makes 1 loaf)

Banana Bread

  • 3 very ripe bananas, plus one extra for the top if desired (this is optional)

  • 1/4 cup almond butter

  • 2 eggs

  • 1 tablespoon vanilla

  • 1 3/4 cups almond flour

  • 1/2 cup coconut sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup dark chocolate chips

Salted Caramel Sauce

  • 1/2 cup full-fat coconut milk

  • 1/4 cup coconut sugar

  • 1/2 tsp vanilla

  • 1/2 tsp sea salt

1. Preheat oven to 350 F. Line a 9 x 5 in loaf pan with parchment paper.

2. Prepare the salted caramel sauce first. In a small saucepan, bring salted caramel ingredients to a boil (coconut milk, coconut sugar, vanilla, sea salt). Reduce heat to low, and simmer for 5-10 minutes until sauce has thickened and caramelized.

3. While salted caramel sauce is simmering, prepare the rest of the banana bread. In a large bowl, mash 3 very ripe bananas with a fork. Add in the almond butter, eggs, and vanilla, and mix together until smooth.

4. In a separate medium bowl, mix together almond flour, coconut sugar, baking powder, baking soda, and salt.

5. Add the dry ingredients to wet, and stir to combine. Then mix in the chocolate chips.

6. Pour half of the batter into the loaf pan. Take 1/3 of the caramel sauce and drizzle it over batter. Use a knife to swirl the sauce into the better. Pour the remaining batter into the pan, and drizzle on another 1/3 of the caramel sauce, swirling with a knife. Top the batter with a banana halved lengthwise, if desired.

7. Bake for 45 minutes to an hour until banana bread is golden on top or until a toothpick comes out clean.

8. Let cool before slicing. Top with remaining caramel sauce. You can reheat the sauce if needed, and if it’s too thick, add 1 tablespoon water.
