Caramelized Onion Greek Yogurt Dip
This super easy, healthified onion dip is SO flavorful, and it’s made with basically three ingredients! You just caramelize some onions, mix into some Greek yogurt and add in some Trader Joe’s onion salt. If you’re feeling fancy, you can top off the dip with some chives. You can serve this dip with chips, but it also tastes great with veggies like carrots, broccoli, celery, etc.
If you don’t have the Trader Joe’s onion salt, I’ve included recommendations below for what you can do instead.
Ingredients
1 tbsp olive oil or butter
1 medium yellow onion, thinly sliced
1 cup Greek yogurt (I like to use whole milk Greek yogurt, but you can use any type you want)
1 tbsp Trader Joe’s onion salt*
Optional: chopped chives
*If you don’t have the Trader Joe’s onion salt, I recommend using 2 tsp onion powder, 1/2 tsp garlic powder, and 1/4-1/2 tsp salt (start with 1/4 and taste from there, add as needed).
1. Heat olive oil/butter in a medium/large pan on medium heat until oil is hot. Add the onions, and coat with the oil. Turn the heat down to medium-low, and let the onions cook. Stir every 10 minutes to prevent burning. You’ll want to cook the onions for about 30-50 minutes until they’re sticky and brown. If they start to dry out, burn, or stick to the pan, add a little water for moisture.
2. When onions are caramelized, set a spoonful aside. In a medium bowl, mix together Greek yogurt, caramelized onions, and onion salt. Add to a serving bowl, and top with the remaining caramelized onions that had been set aside for garnish. Finish off with some black pepper and finely chopped chives, if desired.
