Coconut Banana Pancakes
These are grain-free and added sugar free, with the main ingredients just being egg and banana! Added in some baking powder + coconut flour to improve fluffiness and texture along with unsweetened shredded coconut, and my oh my! As you guys know, I’m not really a sweet breakfast person generally but I wanted more of these when I was done. Makes about 6 pancakes!
Ingredients (serves 2)
2 ripe bananas
2 tsp baking powder
1 tsp vanilla extract
2 eggs
3 tablespoons coconut flour
1/4 cup unsweetened shredded coconut
Coconut oil for cooking
1. In a large mixing bowl, add bananas and mash until only small bits remain. Mix in baking powder and vanilla, then beat in eggs until well combined. Add coconut flour and shredded coconut and mix until combined.
2. Heat a large skillet up on medium heat. Add a little coconut oil to coat the pan. Add in batter (3 tablespoons makes 1 pancake), and cook covered for about 4-5 minutes on the first side. Flip, and cook for an additional 3 minutes, making sure pancakes don’t burn.
3. Remove and top with extra coconut, and butter & maple syrup if desired.
