Caramelized Banana Overnight Oats
Overnight oats are a great way to start your day if you ask me. Hot take: I don’t LOVE oatmeal, but I do really enjoy overnight oats, and I’m starting to incorporate them more into my life!
Ingredients (serves 1)
1/2 cup rolled oats
3/4 cup non-dairy milk
1 tablespoon chia seeds
1 tablespoon sunflower seeds
1 tablespoon flaxseed meal
1 tablespoon maple syrup
1. Mix everything together in a jar, and refrigerate overnight.
2. In the morning, slice up a banana and heat up 1 tablespoon coconut oil in a pan on medium heat. Cook for 2-3 minutes on each side (try not to burn them by lowering the heat if you need!)
3. Add to your oats and top with cinnamon and coconut!
