Buffalo Chickpea Tacos
Cottage cheese is underrated. There, I said it. I decided to amp up the protein in these and do a mix of chickpeas and cottage cheese. The gist: mashed chickpeas,probiotic cottage cheese (my actual new obsession), medium-hot buffalo sauce, green onion, red onion, and shredded carrots on an almond flour tortilla.
Ingredients (serves 2, makes about 4-5 tacos)
Filling
4-5 taco sized tortillas
1 can chickpeas, mashed with a fork
1 cup cottage cheese
3 tablespoons buffalo sauce, plus more to drizzle on top
Toppings
2 stalks green onion, thinly sliced
1 tablespoon finely chopped red onion
1 small carrot, shredded or julienned
Drizzle of more buffalo sauce!
1. Mix taco fillings together in a bowl until evenly combined. Spoon into warmed tortillas.
2. Add toppings and enjoy!
