Arugula and Lentil Salad with Strawberries and Avocado
I love fruit in my salads. I think it has to do with my extreme love for savory and sweet, but it also gives off this summery vibe, almost like I'm on vacation. Plus, you can't say no to extra vitamins and antioxidants.
This salad has protein from lentils and hemp seeds, vitamins and nutrients from arugula, micro radishes (microgreens are really high in nutrients!), and healthy fats from avocado and olive oil.
Ingredients (serves 1)
- 2 cups arugula
- 1/2 cup cooked lentils
- 1/4 avocado
- 3-4 strawberries
- 1 stalk green onion
- A handful of micro radish greens
- 1 tablespoon hemp seeds
- Olive oil
- Balsamic Vinegar
1. Put arugula on a plate and top with lentils, cut avocado, chopped green onion, micro greens, sliced strawberries, and microgreens. Top with hemp seeds and olive oil and vinegar to taste.
Aren't salads so easy?!
