Chocolate Chip Banana Bread Oatmeal Cookies
Cookies are my favorite dessert — chocolate chip cookies particularly. But lately I’ve also really been into banana bread, so I wanted to put the two together. I also was hoping to make these somewhat breakfast-friendly, so I added in the oats to help hold them together. The result is a beautiful chewy combination of some of my favorite desserts.
Ingredients (makes 14 cookies)
Wet Ingredients
2 ripe bananas
1 cup cashew butter
1 egg
3 teaspoons vanilla extract
Dry Ingredients
2 cups old-fashioned oats
2 cups almond flour
1 tsp baking powder
1/4 tsp sea salt
1/2 cup coconut sugar (or 1/4 brown sugar + 1/4 cup white sugar)
1/2 cup chocolate chips
Optional
Flake salt, for topping
1. Preheat oven to 350 F. Add bananas to a large bowl. Mash with a fork. Mix in remaining wet ingredients.
2. Leaving out the chocolate chips, mix dry ingredients together in a separtate large bowl. Mix in dry ingredients into wet ingredients. Once everything is evenly combined, mix in chocolate chips.
3. Scoop into 1/4 cup size balls of dough, and place on a parchment-lined baking sheet. Press down on the cookies to slightly flatten them. Top with a sprinkle of flake salt, if desired. Bake for 20 minutes or until cookies are golden on the outside. Cookies should still be soft/moist on the inside.
